Asparagus Recipe

As we “march” into spring, I’m looking forward to fresh asparagus at the farmer’s market.

A quick and easy way to fix it is to pan roast it in a large skillet with a tablespoon or two of butter over medium heat.

Cover the pan, occasionally shaking the pan until tender-crisp, about 5-7 minutes.

Remove the lid and add lemon juice and salt and pepper to taste.

If you like, toss with grated parmesan cheese just before serving.

Mmmm.
